Ken,
I don't know the name of it (maybe Kohala Stables) but there's a large stable on Kohala Mountain Road, at the top, about half way between Kamuela and Hawi.

The stable I am familiar with in that area (along the mountain road) is Kahua Ranch. They seem to do anything and everything to generate income - livestock, ATV tours, horseback riding, organic greens, vacation rental, etc. I was on their property once for a Hawaii Forest and Trail hike - they let HFT use their land for a gorgeous hike inside the forest on some their pu`u. It was amazing to go from the cold rain and roaring wind on the pasture into the forest and hear the noise of the wind die away and everything become calm and quiet as we entered the protection of the trees.
I did a ride once in Waipio Valley that was interesting, but it was a nose-to-tail kind of deal along the valley floor - not a lot of room to do much more than a trot. The trail horses look kind of wistfully at the wild horses that are living down there.
Also, the ride that I have been wanting to do, but never manage to have time for (darn those Aloha Music Camps!) is the horseback ride at Sliding Sands on the top of Haleakala on Maui. It is supposed to be absolutely beautiful, and much less work (for the rider at least!) than doing the hike.
