...how 'bout Hawaii?!! Not sure you can find any in the cultural mecca that is the state of Illinois, but its easy to make. Fat Choy's recipe on-line has a great recipe. Mild & extra spicey. Also, if you have Asian, (i hate that term) markets in your area, most carry it.

#1) Yeah...mail order. I tried some here from a grocery store and it was too fishy. Not the same. An "oriental" store here used to have it in quarts, but has since gone out of biz a few years back.
#2) I googled kim chi but it didn't come up with anything from Hawaii, so I will look for the fat choy recipe.
It does smell a little though doesn't it. I can hardly wait to have Kim Chi breath again :)
If anyone else knows of a good source, Let me know.

It *is* possible to make your own, if you are truly serious about it. I have a friend who found the secret: you put the cabbage and other stuff in a ceramic pot and bury it in the ground in the Fall. Dig it up in the Spring and it is what it is supposed to be. Of course, he was at the Cho San reservoir and learned, before that, how to really make it.

Haole Boy, change your google search to "kim chee" (the more common spelling) -- and check with every Asian-style merchant in your area. Even iff they don't sell kim chee themselves, odds are good that they will know where it can be purchased.

Ah yah - didn't notice your spelling, but auntie Maria is right. If you travel at all, here in the Los Angeles area there are lots of places, including at times, our local supermarket. You'll probably end up trying several brands. By the way, it's very good eaten rolled up in a tortilla -

I believe it is Chosin resevoir. It is in (now) North Korea very close to the Chinese border. It is the place where the Marines were surrounded in 1953 by two million Chinese and Chesty Puller was quoted as saying, "Retreat, Hell, we're advancing in a different direction . . . and "We're surrounded, now we've got them just where we want them! My Dad is one of the "Chosin Few".

Good suggestions...and the google sugestion was good too. "Chee" gave me much better results.
I was surprised to see a Pizza Hut in Haleiwa, Oahu,(my home town)had a snack bar with Kim Chee...Who woulda thought. Since my wife doesn't like the smell, it will be hard to make it at home. I might do it anyway.

I've made kim chee a bunch of times. Season to taste. I've avoided using shrimp paste in mine, just bok choy , garlic (lots), onion, red pepper, ginger and some soy along with salt and sugar. I found that if chopped fine, it makes a decent relish for hot dogs and brats. BURP!

Update on my search for Kim Chee:
I just recieved some from "KoaMart" on the web. I initially found the site googling for "Kim Chi". It is sold in 5.6oz pull-top cans and it tastes really good! To anyone in the mainland that misses the taste of Kim Chee and can't find it locally, this place has it. They offer several kinds and list the major ingredients (as I reacall) so you can choose. Now I don't have to make it.
