I have two lap steels that I bought used on the web.

One I love and it is 6 strings.
The other one has 8 strings. A Georgeboard, knotty pine vintage.

I have found a deserving student back in Hawaii and wish to gift her the 8 string. She is an outstanding young musician and loves the steel.

My question: which two strings do I take off to make it a 6 string?
Seriously, does it matter? the two bottom ones?

I was going to include a little Honeytone amp and cord so my young friend could enjoy annoying the neighbors.

Take off the first and eighth, that would leave the fretboard more easily read and the strings would all be in a similar magnetic field. (On an 8 string guitar with an 8 string pickup the first and eighth are on the periphery and have a magnetic field on only one side of the string, usually)
