Ed - you are even making me hungry, even though I cooked a marvelous heart healthy dinner today. Greek Lemon-Dill chicken salad with sliced tomatoes and gahlic bread (that was not heart healthy at all). For dessert, a blueberry/french vanilla parfait made from fat free cream cheese, sugar free/fat free french vanilla pudding made with skim milk and fat free cool whip. I made a blueberry slurry out of fresh blueberries, sugar, a wee bit of water and cornstarch to thicken. Layered pudding stuff and blueberry stuff and put a blob of cool whip on top. Tasted mighty fine, but the manapua looks way more better. Too bad dim sum get too much salt. Shoyu does not fit on my diet. Soon, though, I am going to rebel and go for dim sum. Az y hahd.

For those like me who do not know what is pulusami -- here goes.

Imu-less Pulasami or Lu
Traditionally, instead of the taro leaves being minced and mixed into the Lu, the coconut cream mixture is spooned by individual servings into a whole taro leaf which is folded around it, after which the whole packet is wrapped in a banana leaf which is secured shut with a banana leaf rib. These packets are then baked in the traditional imu along with meats or seafood and starchy vegetables like plantain, breadfruit and taro root. The taro leaf wrapper is eaten, but not the banana leaf, and one dips one’s slices of breadfruit and taro into it. This version, which we enjoyed at Teesa’s Barefoot Bar in Alega Beach, American Samoa, is suitable for “home” use!
8-12 young taro leaves *(or spinach)
½ onion chopped
½ tsp salt
½ cup thick coconut cream

Finely mince the taro leaves (or spinach). Mix with other ingredients.
Place in a pot and cook for 10-15 minutes OR put in a casserole and bake in an oven for one hour.
An atmospheric way to serve pulasami would be spooned into a half a coconut shell.
Variations: In the Samoas and Tonga, Lu is often combined with canned meats or fish, eg. Corned beef, mackerel, chicken or lamb. Of course, the same can be done with “real” meat and fish (as was done at Teesa’s), a tasty use for leftovers!

*Remember: The taro leaf cannot, under any circumstances, be eaten raw.
