Eh, Wanda, I add bulk sausage to my Jambalaya, and a package of Andouille chopped up and rendered. I use olive oil for the roux, but toast the flour on a cookie sheet under the broiler till it gets brown. Olive oil won't take the heat that lard will for cooking roux, so the browning the flour trick cooks it and makes a fair roux. For T'anksgiving I'll be doing pumpkin cheesecake (graham cracker crust, follow the pumpkin pie recipe, but add 2 blocks of cream cheese and a couple eggs and a bit of brown sugar), and a plum crisp. I told my sister-in-law that if get more guests, I'll do a stuffed pork loin--stuff it with chopped kielbasa, onions, garlic and breadcrumbs. I used to worry about eating too much, til I realized that judicious use of the freezer can make the feast last a long time and give me something quick to fix after work. Pierogies are always in order. Fun thing to do while cooking-listen to CDs. |

Eh Kory: I do not make a roux for jambalaya - do not need the thickening when putting the ri e into the pot with da oddah stuff. I oni make roux for gumbo.
But today I made a big pot of oxtail soup. Mmmm. Very beefy. I cooked the oxtails, onions, etc., yesterday so I could refrigerate overnight and let grease rise to the top. Today I scraped off the layer of grease (plenty) and added my fresh & some various frozen veg. Another good thing to do is save in a freezer contaier, all little bits of left over veggies, gravy or sauces that might be compatible and then when container gets full, make a big pot o soup. Frugal and yummy.
My girls used to read a book about stone soup. Also about Strega Nona and the magic pasta pot. |

Braddah Ed - when we went, I had da whitest, palest legs. Pasty white. But after I got Waikiki, I was no shame cawz plenny oddah tourists had white legs. I got sunburned, though, and ended up a lovely shade of red.
Don't have to hit da tanning salon. Can get vaeline intensive care lotion to put on which gradually turns you tanned looking with a gentle glow. Not orange like all the old time self tanners. But must exfoliate well prior to application. Ahdunno how it would work on men with hair all ovah dey arms and chest and legs. And armpits.
Why women shave armpits and men do not? Same same legs and oddah stuffs? |

What means "uta" or something lidat. I have heard on some of da Iz recordings, he says something that sounds like "uta". Cannot be Hawaiian or can it with letter "t"? |

Wandah, as fah as I know, "buttahfish" is same ting as black cod an sablefish. Buttahfish real oily, so da buggah good in da laulau fo give flavah (plus da pohk fat, which rules, ov coahse).
Accohding to da "Food Lover's Companion":
"Found off the Atlantic and Gulf coasts, the small (average 8 ounces), high-fat butterfish has a tender texture and a rich, sweet flavor. It is usually sold whole and is sometimes smoked. Butterfish can be broiled, baked, grilled or sautéed. Depending on the region, they're also known as dollarfish, Pacific pompano and pomfret . See also FISH; SABLEFISH."
"Uta," at least in Kepanee, means "song." Ahdonno what songs Iz was singing, but I doubt dat's what he was referring to. Get planny mo `olelo experts heah, but get t's in Hawaiian - tutu, fo' exampo. Mebbe he was singing in dialect? An, eh, `olelo experts, haccome "tutu" nevah become "kuku"--oa did I jes ansah my own question?

These guys take "burger"-dom to an extreme level. More than a half-dozen kinds of meat to choose from, including their own blends (Churken: chicken+turkey; Dork: duck+pork; Lawrence Velk: venison+elk), about a dozen choices of cheese, a score of sauces and additional toppings. Pricy, but we ain't talking fast-food burgers here. Funky little hole-in-the-wall shop with classically kitschy decor (mostly old lunchboxes). Out-bloody-standing food - but you better be hungry.
(WARNING TO WANDA --- Close your eyes for this next part) I had "The Smoker" - ground top sirloin, maple bacon, havarti cheese, grilled onions, smoked chipotle mayo, bbq sauce, I dunno what else, on a kaiser roll. (No, I do NOT eat like this very often.) Momi had a lamb-burger with a basil-garlic aioli/mayo, and we split what they called "onion fries" - like onion rings, but in the shape and size of french fries. She drank watah, I had what's known as a "Dublin" Dr. Pepper - it's the original D.P. formula, made in Dublin, Texas, with cane sugar rather than corn syrup, available in small batches (and small bottles). (WANDA --- you may open your eyes now)

Gotta admit - I don't think that photo was taken at the restaurant. The seats don't look like what we saw, and the burgers, while huge, didn't seem THAT big. Unless that was a special order of some kind. |

Ice cream -- that is one thing I surely love. I don't like Breyers. Too grainy, ice crystals. Mo bettah Pierre's from right here in Cleveland or Graeter's from Cincinnati. But even better is wcerto Ice Cream Co. I haven't made any for a great while, but when I do, ho, braddah. Nothing but good cream, sugar, vanilla, eggs. I have made some good flavors like Amaretto with slivered toasted almonds and Amaretto di Saronno or Bailey's Irish Creme, fresh strawberries; butter pecan, even made blueberry sorbet. And the plain vanilla is way ono, too. I like homemade because store bought ice cream seems gummy to me with whatever thickeners or agaragar they put.
I cannot abide the sugar free, fat free ice cream. First of all aint no way shape or fashion that it is ice cream. It is only some mix of chemicals and dimethyl-bad stuff.
OK, I am going to work out on the recumbent cycle extra more tomorrow. Gotta get ready for Thanksgiving, a day in which I am going to eat what I want. The day after Thanksgiving last year is the day I began having heart problems. I'm getting a bit scared of the anniversary date. |

PS: For the super duper Tahnksgiving dream buffet that Dukie is putting together -- I would also add some good wine. My favorite is Piesporter Gold Tropfchen or even Zeller Schwartze Katze. For bubbly, I like Korbel Brut.
Wine, especially red wine is really good for you, one 5 oz. glass per day. Lots of antioxidents and other good stuff. |

Wanda, I bot sum sulfite free wine dis weeken', woz real good but no woz good coz I wen chug em like beeyah and den won bottoh wen pau reel kweek anden I wen pass out. Oh wait, I wen go buy 2 bottoh.
Breyers is grainy coz nomo da odda kine junks. Hoh tahk abou't amaretto an baileys, befoe time wen I had cute girlfren, I mek good kine stuff. Yea Guava-man, woz da won had pooka pantez on pohposs. Frozen baileys on breyers vanilla ice creem, wid home-made Kahlua - yea I make em wid vanilla beens an da kine wite litening an dark coffee bean an shugah (commercial kine wite litening). I had my own ice-cream mekah. In doze daze, I woz purdy sweet an sensitive buh now I sowah like lemon an pakiki like humu humu ele ele skin coz now I won gromp ole fut. I useta mek buttah pecan cookies too. Buh she wen ged fat too coz she no like go run fo 25-30 miles a week an pump iron at da gym. Azz y hahd. |

Ahdunno about sowah poi. George Kahumoku talks about footprints in da poi. Now az y hahd! I neva like footprints in my kaukau. Somehow just makes da appetite go holoholo.
And Glenn....pooka panties ON POHPOSS ....I no even want to tink about dat. Well except panties get two big pookaz on pohposs, for each leg to go in. Now no make me blush. Even yo pooka bebedees get da same kind two pooks and prolly even one nodda in da middo. |

That's sort of what the mosquitoes say when I visit the Islands - "Oooh, look! White meat flown in fresh from the Mainland!" - then they attack. They leave Momi + family alone when I'm there; I'm their favorite mosquito repellent.
