I'm making a Dutch oven full of oxtail stew right now. I put onions, garlic (never enough), bacon (browned with the onions), oxtails, mixed veggies, potatoe, bay leaf, a few drops of hot sauce, one small can of tomatoe sauce, 1/2 cup red wine and one box beef broth plus pepper to taste. When pau, I'm going to make ricotta cheese dumplings on top (just use "Heart Healthy Bisquick", ricotta and enough milk for the dough). Anyone have favorite things / kitchen sink they like add?

next time, instead of bay leaves use maile leaves. (two large dried or dehydrated) |

Parsnips (parsley root) and shiitake. Ricotta dumplings must be like gnocchi kine??
Kory, who you got over dea helping you eat dakine?
I like make my oxtail stew at least a day ahead for let the grease congeal at the top and then just spoon it off. 4 by-passes is enough for me, thank you.
I skip the bay leaf and put basil, thyme, marjoram and caraway seeds. But to me, oxtails and beef shanks are about the only beefy-tasting beef you can get nowdays. Beef don't even taste like much of anything.

But Brandon, he is using ricotta dumplings for the starch of the meal. My opinion, that is much better than rice. Yum. |

My brother and sister-in-law came down for a bowl (they live upstairs). The whole house smelled deliscious! |
