Awright. Dis mines: 2 packages of oxtails, flour them and brown with 2 strips bacon in an iron pan or Dutch oven. Try to get a good caramelization. Add one chopped onion and as much chopped garlic as you think you can stand. Transfer to a large slow cooker (ox tails take a LONG TIME, trust me) Deglaze the iron pan with a cup of red wine, pour in with the oxtails. Add one small can of tomatoe juice and a can of beef broth. Add 1/2 cup chopped carrots, 1/2 cup peas, 1 russet (baking) potatoe finely diced. Season with a couple shots of Tabasco, pepper to taste, a bay leaf and customize it to your taste. (green beans, chopped cabbage, bell pepper, parsnips, etc). Let the whole thing go for at least 6 hours. After pau, dump into the Dutch oven. Make dumplings to float on top -- I use Hearthealthy Bisquik (no transfats) and augment the dough with Ricotta or Quark (pot cheese). If you don't want dumplings, serve over rice. That's my story, I'm sticking to it. Be warned: the whole house will smell great! Make sure that there is enough liquid in the pot. |
