Ok, so it's probably Hawaiian music 101, but why are the VERSES of Hawaiian songs often sang twice, back to back before the next section or verse?

At first I thought it might be an IZ styling, but then it came up all the time--with all artists with traditional songs.

This is a characteristic of mele hula that allows all of the participants involved, the dancer, the musicians and the audience to interact with each other and enjoy the story being told. More often than not the audience knows all of the words maybe even the hula itself, so why not extend the song and enjoy pleasure of the moment.
