Noeau got my digestive juices flowing when he mentioned manapua. I used to get the BBQ chicken kind at Costco, but now they don't have them. I like the BBQ pork also. Any thoughts on making them from scratch? What kind sauce for the meat?

Costco's my source for the things, which around the northwest are called humbow. In the Philippines where I grew up, it's called siopao (SHE-ah-pow). Costco's the easiest manapua to get your hands on, then just microwave for a minute or so and then jam it in your poi-hole. Mmmmmmmm. Jesse |

Aloha e --- I think this is Toki's site: Manapualabs.com. You will find many recipes and methods. About 40 yrs ago before CostCo, the easy way to make them was to get the refrigerated biscuit tubes and use that dough, and then make whatever filling you'd like. They're more char sui bow size, but good for parties. Try some of Toki's fillings, or create your own. You can make the char sui moist enough by using carmelized onions and some mushrooms and you don't have to find lots of ingredients. Chinese 5 spice is available in most Asian markets, but you can also make it yourself. Note that different brands have different blends. And yes, the red on char sui is just food coloring. If you don't have a steamer, just put a rack like from the toaster oven in the wok and put water on the bottom and lid on top. It has to be high enough not to make the dough gooey. Now you've made ME hungry! Good thing Bob's has them for $1.50. Aloha! |

How to videos: http://www.youtube.com/results?search_type=&search_query=how+to+make+pork+buns&aq=f
Only thing - you gotta have lots of bamboo steamers to make them at home otherwise you will be steaming all day long.
Like bradda Al says, gotta have squares of waxed paper .
Some kinds of steamed dim sum, you can steam on top of cabbage leaf or lettuce leaf instead of paper.
Y'alls is making me hungry. It's breakfast time and I neva had dim sum for breakfast, only just had miso soup for breakfast. |
