Okay everyone....I am looking for a good recipe to use to smoke cuts of meat from wild pig or Billy Goats. You know..the kind they serve as Pupus at the backyard Baby Luaus.....Got any to share? Thanks.

Mama's marinade was just her teriyaki sauce, little less sugar, little more garlic. No foget da sesame oil, but not too much.

Small kine good info...People often complain about the gaminess of the meat when referring to feral (wild) goat or pig. More often than not, it's the care in handling (or lack thereof) while field dressing, transporting and carcass hanging and final butchering that will impart an unpleasant flavor.
Some animals will have more of a wild flavor depending on their environment and diet. There's a place on Moloka`i we used to hunt goat. In a valley was wild watercress growing in a natural pond fed by an underground spring. No smelly goats. I would guess it's because of their access to water.
Anyway, if the hunter is careful, the meat is generally OK. For some people it's mental as well...They know it's wild game, therefore they know it's yucky... |

Good points PoiDog. As for me I kind of like the gaminess that is imparted by the pig or goat that is smoked. Funny that you mentioned Molokai. I spent 3 years there and really enjoyed the fishing. Especially on the flats. I remember whipping for papio at Kamalo(sp?). We'd wade out to the big blue holes with our plugs and 12 lb test lines, only to have Mr. ULUA come up and strip our reels bare. Every time I fly from Maui to go to Honolulu and we passoverhead, I can still pick out the blue holes and always have a warm spot in my heart for Molokai and the people there. |

Memories? The area was one of our tako grounds too. Also, if you look to the left of the old Kamalo Wharf, you can see the muddy sediment from Kamalo Stream. Used to have plenty clams; until the wild pigs caught on and dug 'em all out. |
