Eh, Wanda! Good you're on da mends. Change of diet is really just learning to taste all over again, discovering new nuances. It can be a challenge especially if you have 20/20 tastebuds. Play da ukulele. Laugh (easier to do than you think, when you consider how ridiculous humans can be, but that's another soapbox). All the best. Kory |

Whilst searching the internet for recipes of stuff I can make while on a chronic kidney disease diet, I found recipes for gandule rice -- this is Dukie's specialty, and it is way good. Another thing that I can make is called pancit, I think is how it was speclled. Braddah Jay says his wife can make that and it is ono. I think it is Filipino.
But I learned no mango, no papaya. Can you believe that? What da heck???
What I have to do is stop wanting to be the gourmet cook and just cook whatever will help me survice. Today we had chicken marsala and rice. And I had a popsicle.
Once again, thank you all for the nice wishes. Jack - we will be out in your neck of the woods someday, I promise. I cannot remember when is that Army reunion for Paul that was supposed to be in Seattle. I think maybe they switched it to Ft. Hood, TX.
I know -- all you guys go O`ahu the second and third weeks of August. We will all descend on Duke and Jay and Shawn and Zack and Derek and all them guys. Hah, what a hoot that would be. |

Geez Louise, Wanda. I haven't checked out da patch for a few days, and when I come back, I see all this stuff going on with you. All the best to both you and Paul. Just go with the flow and don't dwell on the things you may be missing because of diet restrictions etc. Just think of all the beauty that surrounds you every day and keep those thoughts in your mind. Think of all the people that are concerned about how you are doing and draw on their strength to pull you along. |

OK - this is the last moaning and groaning I will do about this latest setback.
Kidneys are bad. Not eliminating sodaium. Not eliminating potassium. On low-sodium, low potassium diet.
LOW POTASSIUM FOODS CAN EAT:
Beer, 12 oz. 2 mg potassium Alcoholic spirits (whiskey, vodka, rum. giin) 1 mg. potassium cake donut 40 mg potassium glazed donut 52 mg potassium White refined bread - 42 mg. potassium
BAD STUFF CANNOT EAT Mango 452 1 reg. sized mango Papaya - 587 - one whole papay (I can't remember how big it can be) Whole Wheat Bread - 247 mg potassium Pinto beans - 772 in a half cup of pinto beans.
I gota turn into an alcoholic donut eater, I guess. Very weird how what was bad yesterday is OK today. It all depends on the perspective. Kind of reminds me of a Bob Dylan song or something about the first one now will later be last.

Wanda, remember that we all are just plumbing the depths of our ignorance. Dylan's song is from a saying in the Gospels. No worry da food, jus' listen to music and eat what you can. |

OH Wanda I can not believe I been so busy at work I have not taken the time to go to da patch. Girl it is a hard road but if any one can do it I KNOW you can!!!!! Biggest thing here is Learning to EAT TO LOVE NOT LIVE TO EAT. I know that is so much easier to say than do but I pray you find a way cause the other option is NO OPTION food is just fuel. You just gotta find another passion maybe the Ukulele can keep you hands busy? Anyway know that I will have you in my thoughts and prayers. |

Shawn - you make Auntie laugh! That is the best way to keep my mind off the kaukau. I have lost about 9 lbs. since coming home from the hospital. Seems like I am losing about a pound a day. It's gotta be the water pills.
Tuesday I go for a radioactive stress test, supposed to last 4-5 hours total. Sounds like great fun. I'll probably turn into the incredicle hulk. |

Gregg, you made me laugh so hard. Thanks! Now your radio activity is just for fun and enjoyment, yeah?
Nancy - thank you for your heartfelt thoughts. I know Prentiss has been successful with the heart problems. Other kidney patients can handle the restrictions, so I am going to do it. Because I sure don't want dialysis. |

Q: Doctor, I've heard that cardiovascular exercise can prolong life. Is this true? A: Your heart is only good for so many beats, and that's it... don't waste them on exercise. Everything wears out eventually. Speeding up your heart will not make you live longer; that's like saying you can extend the life of your car by driving it faster. Want to live longer? Take a nap.
Q: Should I cut down on meat and eat more fruits and vegetables? A: You must grasp logistical efficiencies. What does a cow eat? Hay and corn. And what are these? Vegetables. So a steak is nothing more than an efficient mechanism of delivering vegetables to your system. Need grain? Eat chicken. Beef is also a good source of field grass (green leafy vegetable). And a pork chop can give you 100% of your recommended daily allowance of vegetable products.
Q: Should I reduce my alcohol intake? A: No, not at all. Wine is made from fruit. Brandy is distilled wine, that means they take the water out of the fruity bit so you get even more of the goodness that way. Beer is also made out of grain. Bottoms up!
Q: How can I calculate my body/fat ratio? A: Well, if you have a body and you have fat, your ratio is one to one. If you have two bodies, your ratio is two to one, etc.
Q: What are some of the advantages of participating in a regular exercise program? A: Can't think of a single one, sorry. My philosophy is: No Pain...Good!
Q: Aren't fried foods bad for you? A: YOU'RE NOT LISTENING!!! ..... Foods are fried these days in vegetable oil. In fact, they're permeated in it. How could getting more vegetables be bad for you?
Q: Will sit-ups help prevent me from getting a little soft around the middle? A: Definitely not! When you exercise a muscle, it gets bigger. You should only be doing sit-ups if you want a bigger stomach.
Q: Is chocolate bad for me? A: Are you crazy? HELLO Cocoa beans ! Another vegetable!!! It's the best feel-good food around!
Q: Is swimming good for your figure? A: If swimming is good for your figure, explain whales to me.
Q: Is getting in-shape important for my lifestyle? A: Hey! 'Round' is a shape!
Well, I hope this has cleared up any misconceptions you may have had about food and diets.
And remember: 'Life should NOT be a journey to the grave with the intention of arriving safely in an attractive and well preserved body, but rather to skid in sideways - Chardonnay in one hand - chocolate in the other - body thoroughly used up, totally worn out and screaming 'WOO HOO, What a Ride' AND..... For those of you who watch what you eat, here's the final word on nutrition and health. It's a relief to know the truth after all those conflicting nutritional studies.
1. The Japanese eat very little fat and suffer fewer heart attacks than Americans.
2. The Mexicans eat a lot of fat and suffer fewer heart attacks than Americans.
3. The Chinese drink very little red wine and suffer fewer heart attacks than Americans.
4. The Italians drink a lot of red wine and suffer fewer heart attacks than Americans.
5. The Germans drink a lot of beers and eat lots of sausages and fats and suffer fewer heart attacks than Americans.
CONCLUSION
Eat and drink what you like. Speaking English is apparently what kills you.

It's the refined foods, the hydrogenated fats, lack of B vitamins and dearth of slack key. |

Ah, but for me, it is NOT the refined food. Well, at least now it is not. I can eat Wonder Bread kine bread, but not a good dark rye or a 7-grain bread or anything like that. Whole grains have too much potassium. I am getting plenty B vitamins now, in a pill the size of a horse pill and it tastes like, well, shall we say, ummm, it does not taste good at all. Funnny thing, it is a kidney vitamin, shaped just like a kidney bean. Color of a kidney bean. Of which I am not allowed to eat. Nomo chili because of beans and because of tomatoes. |
